I have said, on multiple occasions, that’ I’m not much of a cook. However, that doesn’t mean that I’m completely inept in the kitchen. For example, I’m pretty good at making scrambled eggs. And I make a great meatloaf.
Here’s my favorite smoothie recipe:
Berrylicious Smoothie
4 oz orange juice
2 T plain non-fat yogurt
6-8 strawberries, sliced (fresh)
8-10 raspberries (fresh)
8-10 blackberries (fresh)
1/4 – 1/2 cup of blueberries (fresh)
Starting with the juice, add all ingredients into blender. Blend on medium-to-high speed until smooth.
Optional:
- You can substitute apple juice for orange juice.
- You can use milk instead of juice.
- Add protein powder to make a “fitness smoothie” snack.
- Add ice and use the “crush ice” setting on the blender to make a colder version.
- Freeze the berries before using. This eliminates the need for ice, as the frozen berries are like tiny ice cubes. If you use this, be sure to blend on “crush ice” speed.
- If you don’t like all these kinds of berries, trade out whichever ones you don’t like, and/or add more of the ones you do like.
- You can also add honey for a little extra sweetness.
Hint: You can freeze your own berries easily without adding any sugar. Frozen berries and fruit often have sugar or syrup added, which adds loads of extra calories. If you want to freeze berries, here’s an easy way to do it without having all your berries frozen into a big block or blob. Using a cookie sheet, shallow baking pan or platter, cover the bottom with wax paper or aluminum foil then add fresh berries in a single layer to the pan. Put the pan in the freezer for an hour or two. Remove the pan, then put the berries into a large zipper freezer bag. They won’t fuse into a big block, since they were frozen separately. Note: be sure to top and slice strawberries before freezing.
