Thanksgiving

I have so much to be thankful for: a loving family, good health, a good job that pays well, affordable transportation, plenty of food and clean water, a comfortable home, and so much more. And I am reminded that there are many, many in this country, and around the world, who do not have some or any of these things.

One of the things that I generally do not have is a talent for cooking. but today I prepared our entire meal. What I mean is that I prepared every dish for our dinner. I know that there are people all over the country who are like, “And?” Seriously, for me, this is a big deal, and it’s one of the few days a year when I do the cooking.

I wrote yesterday about preparing my turkey for overnight cooking, but here’s how it looked when I took it out of the oven:

Roasted Turkey

This was a small turkey, but it was so good and juicy! Just perfectly done! And we have plenty of leftovers for at least the rest of the weekend.

As for the rest of the meal, here’s what we ended up with:

Our Feast

It may not look like a lot of food, but this is probably the single largest meal I’ve ever prepared myself.

If you’re as fortunate as I am, please remember those less fortunate at this time of year. Give what you can: your money, your time, your energy. Help to spread some love to others this year, so that those who have little might have a little more, and those who have nothing might have some small creature comforts. Nobody deserves to live in poverty, and children least of all. Count your blessings and share a bit with others.
